This makes a lovely alternative to eggs to make a vegan ommlet or quiche. It is really tasty and simple. Twice the price of smaller spice shops though.

One of my favourite flours to use for crumbs / breading, when making schnitzels, crumbed mushrooms, etc. Good depth of flavour, just remember to add salt to the flour when using it for crumbs. Makes an awesome crust.

I use chickpea flour for making gluten free flatbreads or savoury pancakes. Has more protein and is more filling. Doesn't even need eggs or binders. Has a slight bean-y taste, but you can overpower it with other bold flavours or seasonings.

I've used it as an egg replacer, made pancakes with it and mixed it with wheat gluten to make seitan.
