I make dairy free cheese, cheese sauce, all sorts of recipes where you want a stretchy consistency. Plus for those that need it, it is a GF flour. Much easier to use than wheat flour for a white sauce where you have to make a roux with oil, then add your liquid etc. Just put all your ingredients into a saucepan, quick whisk and away you go.26/09/2016, By MickyIm wheat intolerant so have tried many different types of alternative flours and tapioca is definitely my first choice for thicken sauces. What makes it perfect for this pupose is that it doesn need to cook out to thicken like wheat flour, it thickens instantly, and it has a completely neutral taste so it doesn interfere with the taste of your food like many others do (rice flour is very dry and floury while almond and coconut flour is very sweet). The only complaint I would have is that it makes the food look gummy, but it doesn taste that way at all. Its texture is very similar to corn starch and can be used in the same way, but it tastes much better. Highly recommended to others with wheat intolerance or celiac as it is also naturally gluten free.
