Spelt is a cereal grain in the wheat family that has been cultivated for centuries both in Europe and in the Middle East. Due to its similarities to wheat flour, it is a popular substitution (it does naturally contain gluten, as wheat does) and has a slightly sweet, nutty flavour. Spelt also has more protein and fewer calories than wheat flour, another reason it is becoming popular in baked goods.
