Mung beans are a universally loved bean for sprouting, they just work so well as sprouts. They are sweet, crunchy and easy to digest. They grow really quickly so are a convenient sprout option to keep your homegrown raws on the go. Mung beans are one of those great vegan sources for protein and aminos that vegans seek out, and are high in fibre, vitamins B vitamins, iron, magnesium, calcium and potassium too. I have heard good things about Living Seeds and was excited to try these. I get a better yield and better tasting sprouts from organic dried mung beans sold for cooking - which are also significantly cheaper.
